MOUNT KISCO, N.Y. --Thanksgiving is about food, family, football and - let's be honest -- shortcuts. One way to erase holiday headaches: Place an order. Here, take- out options sure to please everyone from those cooking the whole bird to those in charge of the fixings.

A&S Market is a virtual one-stop shop for all things Thanksgiving with a variety of stuffings, sauces and meats to choose from, albeit with an Italian twist. Raviolis of all kinds are here, too, in case you want your pumpkin fix with pasta. Place order by Nov. 20. Talk Turkey : 681 Main St. Mount Kisco, 914-241-6919.

The homemade gravy, cranberry-orange relish and stuffing (vegetable nut and European-style meat) consistently win rave reviews at Chappaqua Village Market , where folks are cooking all day every day to make sure there's always items on the shelves, even for those who don't order ahead. "We'll have products right up until Thanksgiving," said  Randy Leroy, the owner's son-in-law and one of the cooks. He guestimates the store sells from 800 to 1,000 turkeys a season. And don't forget the pies: Among the offerings are bourbon chocolate pecan pie, cognac pumpkin cheesecake and coconut custard. Talk Turkey: 12 King St, Chappaqua, 914-238-4948;

Myong Gourmet loves Thanksgiving and it shows.This year, in addition to its Amish All Natural Turkeys, the gourmet merchant is offering John Boy's Farm Heritage Turkeys, a mix of Bronze Heritage and White Holland Birds. (The Farm even grows their own organic feed for these turkeys!). In addition to turkeys and sides, a Pineapple-Bourbon Glazed Ham is also available. Talk Turkey : 487 Main St., Mount Kisco,  914-241-6333, ; complete menu here .

Each Thanksgiving, the folks at Susan Lawrence Gourmet Foods try to add new things along with the traditional. Recommended appetizers include Truffle Mushroom Brie Torte or Hot Crab and Artichoke Dip along with the standby favorite Autumn Roasted Butternut Squash Soup. Fresh turkeys are available oven ready, pre-basted and supplied with gravy, stuffing and everything you need for a perfect homemade bird without the mess or stress. Orders taken now through Nov. 25. The store also sells hostess gifts. Talk Turkey: 26 N Greeley Ave, Chappaqua, 914-238-8833, ; complete menu here.
